There are many purposes of the grammar of graphics. The first is to develop statistical graphic systems, second is to understand the steps taken to generate charts and graphs. The third is to develop, ultimately intelligent systems and finally they hope to define problem specification and user interaction in a way that enables graphic systems to be understood by ordinary people.
A challenge of using grammar of graphics is to understand the steps that must be taken to output a graphic. There are a lot of steps needed and to understand every step completely would take time.
We have used the grammar of graphics in class when we have taken data and went through steps to make graphs with it.
